Cook fillet of beef rare (or more done if you prefer), slice thinly and arrange on the baby Yorkshire puddings. Add a dollop of horseradish cream and decorate with a sprig of flat leaf parsley. Budget Sprinkle cracked peppercorns and salt evenly over roast; rub in with your fingers. Insert an oven-going meat thermometer into center of roast. On a large plate scatter the crushed peppercorns and salt and roll the beef fillet in them so it's totally coated.
